canada day long weekend.

The weekend started off with a windy and grey Canada Day bbq at Spanish Banks with friends, drinks on the deck at night with homemade Caesar salad and white wine and a dear friend, followed by the movie Babies. Saturday was walking around Granville Island and a picnic on the hill, grilled salmon for dinner with another great friend, followed by Game of Thrones - SO good! Today we walked up Main Street, had lunch on a patio and then we both worked while Hannah napped. I'm now getting ready for a work trip to LA tomorrow morning to be followed by some more Game of Thrones. I wish all weekends were three days long. We really needed it.

Dinner tonight was light and summery, a tasty salad.

Mango and Black Bean Salad
1 19oz can of black beans, rinsed well
1 cup frozen corn
1 mango, diced
1/2 red pepper, finely chopped
2 green onions, finely chopped
1/4 cup cilantro, finely chopped
juice and zest of a lime
1 tbsp olive oil
1 tbsp apple cider vinegar
1/2 tsp chipotle or ancho chili powder
1/2 tsp ground cumin
salt and pepper to taste

Mix everything together in a mixing bowl, tossing well to coat. Enjoy on its own, with fish, chicken, as a salsa . . .
